COR-fetti Mug Cake Recipe!

Started my birthday week off with a green smoothie and some snow.

In the jar: Kale, Spinach, Frozen Mango, PHresh Greens and Chia Seeds!

This week I am really trying to regain my focus for clean, healthy eats and I brought what felt like a suitcase to work full of my meals and snacks.

One of those snacks was the ingredients for this beautiful little mugcake.

I came up with a recipe that was adapted from CakeSweat

COR-Fetti Mugcake Recipe:
Mug Cake
4T COR-fetti Cake Batter Protein Powder
2T Coconut Flour
5T Egg Whites
1t Stevia

2T COR-fetti Cake Batter Protein Powder
2T Unsweetened Almond Milk
2oz Stonyfield Banilla Yogurt

-Mix together all mug cake ingredients and place inside a mug that has been lightly sprayed with coconut oil [ PAM is fine too]
-Microwave for :45-1:00 depending on your microwave
-In a separate small bowl mix together icing ingredients
-Pour over your mugcake

In sixty seconds or less you have a delicious, protein packed snack that won't derail you from your weight loss/ healthy eating goals!

When lunch time rolled around I had chicken that I baked on Sunday in the new Trader Joe's garlic sauce with steamed broccoli

After work I crushed my legs and biceps in the gym to the point I was having trouble holding my phone to talk to Eddie afterwards.

I was so tired that I kind of phoned it in when it came to dinner. There was leftover veggie fried rice from the night before with two over easy eggs on top.

It was surprisingly delicious and something that I may have again in the future.

Yesterday was a great start to the week full of good eats and lots of sweat.

What's this, a weekend recap?


Finally felt better and was able to go to work after two sick days! I left the house a little earlier so I could stop into the local juice shop and get my body some much needed greens. I ended up going with a medium 'Cold Ease," with PHresh Greens and 1/2 of a lemon added to the mix.

Would you believe me if I told you this little guy cost me $8.75!?

I vowed to get back on the make-my-own green juice train right then and there. If anyone wants to buy/donate a juicer to me I would love you forever ;)

After work I came home to a really exciting package:
My new COR-fetti protein powder came, less than 12 hours after I ordered it, talk about incredible customer service!

I made shakes all weekend with this powder for not only myself but Eddie too, we are hooked to say the least.

Yay for being able to work out! Boo for struggling to breathe throughout the majority of the class.
Either way I survived and got a pretty impressive burn out of it.

The rest of the day was spent running errands and food shopping. We were told all weekend to prepare for a heavy snowstorm Sunday into Monday so Eddie and I wanted to stock up on essentials, like these:

 I also picked up some Spring wardrobe essentials, DRESSES!


I woke up and got my booty to the gym for Arms, Abs and Kickboxing, aka the usual 

I still wasn't feeling 100% better but was able to push myself a little harder so I knew I was finally on the mend.

Right after the gym I flew home for a quick shower before meeting up with Sarah for a much needed spa pedicure and manicure

I mean I am turning 28 this Thursday so I was allowed to treat myself a bit, right?

I ended my weekend by watching the Oscars with my family and tallying up the weeks calorie burns. With 3 forced rest days I have to say I am overjoyed that I was still able to burn over 3,000
