Meal prep fail and weekend workouts!


 
 
Monday already?
 
Even with an extended weekend thanks to a work trip to Atlantic City last Thursday I still can't believe how quick this weekend went!
 
 
 
Saturday
 
I had 3 nights of bad sleep in a row the gym was the absolute last place I wanted to be at 7:30 on Saturday morning, BUT I have my favorite class and a partner I wouldn't want to disappoint by not showing up so off I went.
 


It was a great workout and I felt a lot better about going after it was over.
The workouts you don't want to do always feel the best!
 
 
After the gym I had a quick at home brunch with Eddie before we both had to go to work
 



This has been my go to breakfast as of late. 1/2 of an Ezekiel English muffin topped with organic salsa, one over easy egg [YOLK PORN ANYONE!?] spinach and 1/2 a slice of American cheese.
 
Perfection.
 
 
I spent the remainder of my Saturday working, locking my keys in my car, shopping at price club and catching up on YouTube videos/editing my own daily vlogs.
 
Super exciting stuff kids.
OH and I was in bed by 9pm...on a Saturday.
I need a life.
 
 
 
Sunday
 
Unfortunately no kickboxing this weekend because the usual instructor was out. I wasn't going to let that keep me from getting my sweat on so Becky and I took an eight a.m spin class, which was an absolute blast.
 
 
The two of us danced-sang and sweat our way through a grueling 45 minute spin class and decided we want to add this into our weekly rotation at the gym....somehow.
 
 
After the gym I cleaned up the basement before heading to one of the best bakery's on Long Island with my mom to order my bridal shower favors
 


 
All of those came home with us.
Not kidding.
But they were gifts ;)
 
I did enjoy a ladybug cookie and hot pink macron and both were amazing/worth the calories!
 
 
When we got home it was meal prep time!
On the menu this week: Sweet potato, quinoa, and black bean burgers


I adapted the recipe from this one and although I made quite a few changes I used the recommended amount of oil from the original recipe and they came out SO dry. Instead of having them as burger patties I'll be eating them as crumbles over salads this week.
 
 
 
It is supposed to be in the 70's most of this week on Long Island and I'll tell ya I couldn't be happier!
