Breakfast and Lunch/Dinner recipes!




Today I've decided to hit you with not one but two recipes!
Hitting isn't nice, so I am not going to do that...Instead I'll toss them to you.
Slow and underhand.

What were we discussing again?

Oh, recipes.
Lets get to it.



Since breakfast is the first meal of day lets start there.

Awesome Baked Eggs
[working title]



Ingredients
Vegetable of choice
2 eggs
Seasonings of choice
Parmesan cheese
 Ramekin

Directions
Preheat oven to 375 and bake for 12-15 minutes


Serve over 1/2 of an english muffin or toast, preferably Ezekiel because it's the bomb diggity.

For the vegetable I did half of a tomato and the seasoning was garlic & herb perfect pinch.
Perfection 


Chicken and Quinoa Stuffed Peppers
Serves 6


Ingredients
3 peppers, halved
1 lb ground chicken
1 cup quinoa, cooked
1/4 onion, diced
1/8 cup corn
1/2 cup salsa
Shredded cheese of choice


Directions
Preheat oven to 350
Cook chicken in a pan
Remove cooked chicken and drain excess liquids from pan
In a bowl combine salsa, chicken, quinoa and veggies of choice
Add "stuffing" to peppers
Bake for 10 minutes
Remove from oven and place cheese on top of peppers then put them back into the oven for an additional 5 minutes

Allow peppers to cool for a few minutes before diving in fork first.
