Meal Prep & Oscar Sunday

I usually recap my weekends on Mondays, but Saturday was a complete wash for me due to partying a little too hard on Friday, so we will just recap Sunday today.

As soon as I woke up I got dressed and hit the gym, literally within 10 minutes of waking. I was determined to get a good workout in after failing so miserably Saturday [ and most of last week]
I was still not feeling my best, 2 day hangovers are a bitch for lack of a better term, but I got through it.

After the gym I did some shopping, food and otherwise.
Somehow these two polishes ended up coming home with me.

Then it was food prep time!
I really wanted eggplant rollatini Saturday night which is such an odd craving but instead I went for roasted eggplant for lunches this week. Much healthier and lighter.

I seasoned the chicken breasts with a combination of two different perfect pinch flavors: garlic & herb and rotisserie chicken. I love those seasonings they make everything taste so delicious and have no added salt.

A few hours later it was time to prepare for the Oscars! Mom and I liked to make/have munchies for the awards shows and last night we decided to keep it clean and healthy, her suggestion, not mine.

Celery with laughing cow; homemade guacamole; cucumber slices with dill & Chobani dip; endive with lobster salad.

The show itself was kind of...boring.  We predicted the winners for each category before the show and they all ended up winning! I think we gave them an extra edge ;)

Favorite Moment: Three-way tie- Les Mis cast singing live, Ben Affleck's acceptance speech and BARBRA!

All in all it was a great Sunday and I feel ready to take this week by the reigns and kick it's booty.
