Life begins with LI



The weather this weekend was perfect on Long Island.


Friday

I was able to catch the 4 pm train home from work, and with NO plans for the entire weekend I was a happy girl.



Came home to two packages, one was my new nailpolishes (yes I am addicted) and the second was my bulu box!

 I did an entire review on this product, which I LOVE!

After that I was inspired to make a salad that I have been thinking about all week, and I was so excited with the result I couldn't WAIT to post it






Saturday

Woke up and had overnight oats that I made with my GNC chocolate soy protein powder (look out for a big post on this later this week!) because I had a two hour hardcore workout coming my way


I guess you could say, I got my sweat on!
After the gym it was time for the beach with Mom


Unfortunately it was windy and un-enjoyable so we decided to go home and lounge in our pool for a bit
(it's an inflatable pool, we bought when I broke my ankle 2 summers ago--but we love it)



Since the weather was BEAUTIFUL I suggested going to dinner at the restaurant where my cousin works, which is right on the water.
It was PERFECT

I had a cucumber melon martini

Dad had grey goose with a splash of grey goose (his favorite)

Dinner was fantastic. The view was beautiful and the company was great. We had a really nice night together.

We ended the night with ice cream sundaes from Friendly's (my treat) and watched The Vow (for the fourth time)



Sunday

Mom and I were up and at kickboxing by 8:15
It was yet another great workout.
Seriously our teacher is the best of the best.


After the gym I picked up dads favorite breakfast, a bialy and we spent the day hanging around the house.

I made a BUNCH of food for not only our BBQ but for the week.

 tofu post grill plus sides, it was a BIG  hit!

I came up with a new marinade/dressing recipe and tested it on my tofu.

It surpassed my expectations and I am so excited to share the recipe with all of you soon!



I came across this drink recipe on Pinterest and since I had all the ingredients on hand I figured it would be the perfect opportunity to try!

The Frenchy
(not sure why it's called that)
1 1/2 oz Pear Vodka
splash of pineapple juice 
splash of cranberry
serve over ice

It's my NEW summer cocktail, I highly recommend it to everyone reading this


Me and Chance, one of my furbabies---he is our rescue and as you can tell he's very happy :)



Another great weekend in the books!
