Gluten Free Cherry Almond Granola!

This past week I have been noticing that when I eliminate gluten from my diet I am not having the stomach pain as often as I was. So I am making conscience effort to avoid gluten as much as possible from now on. 

Which means I have to find new ways to not only eat but cook as well. My first experiment was to make my own granola, and it came out better than I had expected so I wanted to share it with all of you! However let it be known, as I was making this I wasn't planning on it working out and sharing it so there is a lack of photos...for that I apologize. I will be making many variations of this in the future so I will make up for the lack-o-photos then!




G-Free Cherry Almond Granola
Makes 10 servings



Ingredients:
3 cups GF Rolled Oats
1/4 cup raw almonds
1/2 cup Coconut Oil
1/4 cup Dried Cherries (or dried fruit of your choice)
2t organic honey







Directions:

Preheat oven to 325


In a medium saucepan heat coconut oil and honey. The coconut will melt from it's solidified form into oil. It takes about 3-5 minutes.


 In a medium bowl combine oats, cherries and almonds. Once the oil has completely melted pour it into the bowl and mix.


 

On a lined baking sheet spread the granola mixture as evenly as possible.

Bake for 25-35 minutes, until golden brown



Remove from oven and allow to cool before tasting...I learned this the hard way. The entire house smelled delicious and I couldn't wait to dive in!

This is the perfect addition to yogurt or for a healthy snack on the go!
