I am on the biggest quinoa kick lately! I'm not sure if you saw my Quinoa & Cheese recipe, but let me tell you it was a HUGE hit in our household. It was also the first time my sister AND my aunt had heard of/tried it and they came back for more..so you know it was good!
Last night I was working on a crock pot recipe, and in the middle of that creation another one was born...
Quinoa with spinach, tomato and white beans
This recipe is all about multitasking, it takes about 35 minutes from start to finish
1 container of cherry tomatoes
1 cup cannellini beans, drained and rinsed
1 package of fresh baby spinach
1 T minced garlic
1 medium onion, chopped
1 cup quinoa,cooked
2 cups of water
Place Quinoa and water in a medium sized sauce pan, bring to boil then reduce to simmer for 30 minutes
While that is cooking :
Preheat oven to 400 degrees and prep tomatoes for roasting
I like to drizzle them with a little EVOO (I just went Rachel Ray on ya) and sprinkle them with coarse sea salt
Then bake for 15-20 minutes, depending on how you like them to look
While the tomatoes are in the oven it's time to start the spinach and cannellini bean mixture:
In a frying pan combine beans, garlic, onion and a drizzle of EVOO
Once the onions have become translucent (about 6 minutes) add spinach
Keep a watchful eye on both the spinach and quinoa (I told you multitasking was involved!), always stirring the two, making sure nothing burns. At this point you should hear your tomatoes bursting away in the oven. When they look like this:
you'll know they're done!
Once the quinoa has absorbed all of the liquid and the spinach has wilted completely, you are ready to assemble
Toss and serve!
