Quinoa & Cheese

I love reading fitness and food related magazines. I have several subscriptions, both on my iPad and through the mail. 
When I was reading through this month's Shape I came across the "Comfort Food Remix" article and all of the recipes look amazing but the one that truly caught my eye was the Quinoa Mac n Cheese.


I decided to make my own version and share it with all of you :)


Quinoa & Cheese
Serves 4


Ingredients:
 1 1/2 cups Vegetable Broth
1 cup Quinoa
3/4 cup Garlic & Herb Feta Cheese
1 package Frozen Chopped Spinach(thawed)
1 Tbsp Crushed Garlic
2 eggs(or 3 egg whites/flax egg)
3 Wedges Laughing Cow Garlic & Herb Cheese
1 Tbsp Parmesan Cheese 
1 Tbsp Whole Wheat Bread Crumbs



Directions:
1. Preheat oven to 375 degrees



2. On stove top, combine Quinoa and Vegetable broth-bring to boil then reduce to simmer for 30 minutes


3. Saute garlic in oil for 3 minutes then add spinach 

4. In medium bowl add eggs, laughing cow, feta and stir
 
5.Add quinoa and cooked spinach to the cheese mix and stir (USE THOSE MUSCLES)


6.Place in a dish, top with parmesan cheese and bread crumbs then bake for 15 minutes

  1. I made this last night except I subbed spinach for broccoli and feta for low-fat cheddar. My first time eating Keenwha (for those of you who don't know how to pronounce it like I didnt) and it came out pretty good! I'll definitely make it again.
