Lately I have been getting a little more creative when it comes to my meals, whether it's lunches, snacks or smoothies I've been keeping my stomach guessing.
I thought I'd share a few of my recent and easy to make favorites!
Every morning I start my day with a green smoothie, they take less than five minutes to make and help me make sure I get all of my greens in!
My current favorite is a blend of:
1tsp PHresh Greens
4 slices of Frozen Peaches
Big handful of Spinach
2-3 leaves of Kale
1/4 of a frozen Banana
Water or Coconut Water
I pop all of these ingredients into my Nutribullet tall cup and blend then transfer to a big Mason jar over ice, add a scoop of chia seeds and shake it up!
On days I wake up really hungry I add a serving of Terra's Whey Vanilla protein powder, just to curb my appetite before breakfast.
My green smoothies give me SO much energy to get through a hectic workday or workout I can honestly tell a difference when I don't have one. Someday I'll have a real juicer but for now my Nutribullet works just fine.
Spinach chips are new to me but they have quickly become a favorite of mine!
To make them all you need to do is lay out a bunch of spinach leaves on a tray, the bigger the better, spray or drizzle with coconut/olive oil and seasonings of your choice.
Bake for 8-10 minutes at 350 and enjoy!
It is no secret I am obsessed with my spiralizer. I bought myself one back in March as a birthday gift to myself and have used it two or three times a week ever since. Not only am I eating cleaner, I am also trying lots of new dishes thanks to my current favorite blog: Inspiralized
This week I took her Sweet Potato Mac n Cheese recipe and turned it into a Healthy Hamburger Helper by added some grass fed ground beef to it.
Not only is it a quick and easy weeknight dinner for you and your family, it's absolutely delicious!
Last but not least, dessert.
Lately I am in love with the newest Quest bar flavor: Cookies & Cream
The other night I was looking through our cabinets for a TV snack that wouldn't totally derail all of the hard work I had just put in at the gym, so I grabbed a bar, cut it into fourths and baked it at 350 for 10 minutes.
Delicious, guilt free and protein packed cookies.
Looks like I'll be needing another box of these bars ASAP, thankfully today is pay day ;)

I spent almost all of my time outside catching as much Vitamin D as possible, my body and mind are thanking me today as I sit at my desk in a room with no windows typing away.
After work Eddie proposed we go on a date, something we haven't done in too long. I couldn't resist a date so off we went to our favorite bar, T.J Finleys.
I tried two new beers, one that will be my go to all summer, "Harpoon BIG Squeeze" it's a shandy flavored with grapefruit and it's just amazing.
For dinner I got their bistro burger: Brie- bacon jam- arugula .. aka heaven.
After dinner I spent the rest of my night with Olivia Pope because I am obsessed with Scandal.
My day started out with a 40 minute walk with my two little men. There is something so peaceful about having coffee on the water first thing in the morning.
Took an unplanned rest day and did some more spring cleaning around the house and some self pampering! I did my first ever hair mask [1T coconut oil + 1T honey melted] followed by a pumpkin face mask.
It was the perfect way to spend a Saturday.
Saturday night was spent with friends, eating lots of yummy foods and drinking fantastic beers while playing Cards Against Humanity.
I was up and in the gym for the usual Sunday routine: Arms-Abs and Kickboxing
Followed by a nice long walk with these two little guys, I love being able to give them some fresh air and exercise.
Eddie and I food shopped at THREE stores, which is a new record for us but we find we get the best deals when we buy some things at different places plus we love running errands together so it's a win-win situation.
After food shopping I spent the afternoon watching Scandal [I only have three episodes left before being all caught up!] before venturing out for frozen yogurt for dinner and watching Game of Thrones to end a great weekend.
I tallied up my total burn for the week and with two rest days I am happy with my numbers!
Before I share a mini progress picture I need to get something off of my chest:
I don't believe in dieting, or over training.
Lately I've noticed a trend that "Summers Coming," so we need to live in the gym 3-4 hours a day or go twice a day while eating next to nothing and restricting "fun" activities because it may hinder you from your "goal body."
NEWSFLASH: As soon as you stop doing all that you are doing, your body will go back to the way it was.
Restricting/over training is just stupid, plain and simple.
With that being said, I decided to take a picture of myself to see if I have changed at all since January.
I have cleaned my eating up a bit and changed some of my workouts but nothing drastic or life changing.
I have to say I am pleased with my results!
Do I have a 6 pack or flat stomach?
Do I care?
Because I am happy with where I am at, I don't have a specific goal in my mind and I am still doing whats best for me.
Stop the "Summers Coming" obsession and LIVE.
Because in the fall or 10 years from now or when you're old and grey, living in the gym and not living your life is going to be nothing but sad.
This weekend was the first one that felt like Spring.
After months of endless snow and freezing temperatures it was definitely welcomed with open arms and windows!
Friday night I discovered a new addiction, SCANDAL.
I know I am almost 3 seasons late to the game but holy cannoli how did I go so long without Olivia Pope in my life!? The first two seasons are on Netflix and trust me you want to add it to your "Watch List" immediately!
Saturday started off with another great workout in Jump & Drill, which is a class offered at my gym that we do 10 minutes of jumping rope, 100 push ups, burpees in addition to kicking and punching drills. I have been taking it for 4 years and am amazed at how it still challenges me week after week!
I spent the rest of the day helping my mom Spring clean her house then decided to get all of my food shopping done and out of the way for the week!
I am also trying to build up our bar, slowly but surely, so I picked up two new to me red wines:

Sunday was another kick ass workout. Abs, Arms and Kickboxing:
Followed by an impromptu brunch at my favorite local restaurant with two of my best girlfriends.
They must have put a little extra OOMPH in my omlette because when I got home I went into a serious Spring cleaning spree. I washed all of our garbage's [which just sounds strange to me] our Bathroom and kitchen, did 4 loads of laundry and did our floors. I love the feeling of going into a busy week with a spotless home, something about it just relaxes me.
After cleaning it was meal prep time, I was able to crank out 12 meals in under an hour, someone on twitter said it best," I am a MEAL PREP NINJA!"
I don't have to worry about lunches or dinners all week, all I need to do is reheat and eat! This really helps me stay on track with eating clean and healthy, leaving no room for error.
I decided to treat myself to a post meal prep beer on our docks while soaking up the last of the weekend sun. It was the perfect end to a busy and productive weekend.
