Avocado Egg Salad & Birthday Cake Shakes



Yesterday was a day of delicious, new-to-me meals.

First I made avocado egg salad on Ezekiel toast for myself for lunch.

Avocado Egg Salad:
2 hard boiled eggs
2 avocados
1T grey poupon [or any Dijon mustard]
1/2 small onion, diced
Perfect Pinch Savory Seasoning

Mash avocado and dice eggs, combine in a bowl and add mustard + seasonings.

Chill in fridge until ready to eat.
Serves 3


Super easy and very filling!


Kickboxing last night was crrrrrrazy. Cardio packed and I am definitely feeling it today.

I LOVE that quote. It's my new mantra. 

After kickboxing I made shakes for mom and I for dinner. These shakes were on my mind all day long and I really just couldn't wait to make them, so much so that they came BEFORE a much needed shower.

It was worth it.

Birthday Cake Protein Shake
[From busygirlseatclean on Instagram]
1/2 cup non-fat cottage cheese
1/2 cup unsweetened almond milk
1 scoop vanilla protein powder [I used vanilla ice cream egg protein from GNC,my fave]
2 drops almond extract -- I'll use 1 next time
1T sugar free vanilla jello pudding mix
ice cubes

Combine all ingredients and blend!
If the shake is too thick add a little water to make it thinner.
Sprinkles are optional but encouraged ;)


This shake is going to be made over and over again because it was THAT good and only 240 calories! I plan on picking up a few more sugar free jello mixes this weekend to add to shakes/pancakes in the future, I just wish I had thought of this sooner.

Failing already




I swear I perform more of a disappearing act these days then is acceptable.
I don't know where the time goes but I hate how little of it is spent here!


Workouts

I took a weight class Monday and Kickboxing Wednesday morning, both kicked major bootayyy


I usually take Yoga Tuesday nights but this week I wasn't really feeling it so I cleaned instead.
Something to remember for next time... yoga > cleaning.

I came up with a delicious protein pancake recipe Monday night, blueberry with maple almond butter.
It was goooood.

Speaking of food my last post was about "locking it up," which has been going great outside of shakes/pancakes for dinner. Tuesday night I had homemade matzoh ball soup [passover] and Wednesday I had homemade sauce and meatballs [because my mom makes it the best] plus a few pieces of garlic bread [because I can't resist the stuff]


I'll admit I am feeling a little guilty about blowing my "plan" already but I can get back on track and readjust for next week. It may not be ideal for me to have shakes as dinner but I can have them for breakfast or lunch then stick to lean proteins/greens at night.

Yesterday I came up with a new coffee combo that I cannot wait to try today when I get into work
So much coconutty goodness!
I'll report back on how it comes out.


Also, I miss my Friday Favorites posts....I really want to try and bring them back in the next few weeks, hold tight for that. For now lets just get me back to blogging 5x a week instead of going missing, okay?

Locking It Up


 
 
 
If you have been watching my daily vlogs [DailySweat] on YouTube then you already know what this post is all about.
 
If you're not watching them... shame on you.
I'm kidding.
But I do a lot of meal prep/cooking/tips in my videos so you may want to check them out.
 
 
 
Anyway today marks 47 days until my bridal shower AND more importantly the day I start to "lock it up," when it comes to my meals/eating.
 


Yesterday I hit the food store to pick up this weeks clean eats and wanted to share my meal plan ideas with you.
 
 
 
Breakfast:
1 cup non-fat/fat-free cottage cheese with Perfect Snaque's Coconut Almond Crunch
OR
1/2 Ezikiel English muffin with one egg and salsa
 
Snack 1:
Hard boiled egg & honeycrisp apple
OR
Chobani flip
 
Lunch:
Baby kale salad with baked & seasoned chicken breast, cucumber, carrots and feta topped with bragg's healthy vinegeratte
OR
Stuffed mexi-tato [sweet potato]
 
Snack 2:
Quest bar
OR
Chobani [if I don't have it in the morning that is]
 
Dinner:
Protein Shake
OR
Protein Pancake
 
 
Each day my goal is to keep my calories at 1,300 or less of clean- healthy eats.
I plugged in today's meals into Myfitnesspal already and I am at 1,266 which is perfect!
 
 
If I need a TV/after dinner snack I have mashed bananas in the freezer for a quick, clean fro-yo.
 
I also weighed myself this morning and plan to weigh in again Saturday just to see if my new plan is working. I don't believe in the scale and have gone over this a bazillion times but I am curious to see if this will help me trim down.
 
After I prepped my meals/snacks yesterday I spent time with these two little guys
We took a trip to PetSmart then cleaned the car, they were such a huge help by NOT leaving the back seat while I tried to clean. How could I say no to those smiles?
 
 
I ended my night with a cup of hot bedtime Yogi tea and felt the quote was spot on [as always]

On The Mend...





It has been a ROUGH few weeks for me health wise. I spent a week and a half dealing with an infected tooth and on medicine to clear it up which was one of the roughest antibiotics I have ever taken. Then as soon as I finished the medicine on Sunday I woke up sick this past Monday. I waited until yesterday [Thursday] to see the doctor thinking I could fight through it but ended up losing that battle and finding out I have a sinus infection + bronchitis.

The dream... I'm living it.


However things could always be worse, and today I am already feeling more like myself.

Yesterday looked a lot like this...





I did go to kickboxing, obviously the smartest idea for someone who is sick and having trouble breathing normally, but I survived.
Then I had this....



NO SHAME IN MY FRO-YO GAME.
It's not a daily or even weekly occurrence that I indulge like this, plus yogurt has probiotics so it's good for me, right?
However, today marks *49* days until my bridal shower so it is time to lock it up and step up my workouts once I am feeling 100% healthy again!



Today I woke up feeling much better thanks to my roids [no rage here] and made myself a swoonworthy breakfast.

1/2 of a toast Ezikiel english muffin with one over easy egg, 1/2 slice of american cheese and lots of roasted garlic salsa.

Perfect start to my Friday.

I have a semi-busy weekend planned: sweat-shopping-work [second job, I'll explain Monday] and meal prep.
Can't wait.

Butternut Squash Sauce





On Saturday I posted this picture on Instagram

And the caption read "Just made this EPIC butternut squash sauce". Which led to many requests for the recipe.

I have to be 100% honest, I wasn't really paying attention to the measurements so these are going to be a roundabout idea of how much I used. I will make this again and pay more attention to how much of what I use but for now that is not the case.


Butternut Squash Sauce

2 cups peeled, chopped butternut squash [I buy it already cut and peeled to make it easier]
1/4 cup milk of choice. Preferably heavy cream but I used half & half because it was what was on hand. Almond milk would work too.
1T Extra Virgin Olive Oil
Seasonings:
1/2 T Perfect Pinch Savory
1/2 T Perfect Pinch Garlic and Herbs
Pinch of Sea Salt

Directions

Place butternut sqush in a pot and bring to a boil until soft
When the squash is soft, remove from heat and drain water.

Place all ingredients in a blender and puree.
Serve over your dish of choice!

I used gnocchi but this would be great over chicken, in lasgana or spaghetti.
The possibilities are endless.

Spring Cleaning: Food & Home



Good Morning!
 I hope you all had a fantastic weekend. Mine was busy but all filled with unplanned events, which makes for the best weekends in my opinion.

Friday night I attended a gym happy hour at my favorite place in town, Barrique, where I discovered they have $3 mixed drinks aka Absolut citron and soda for $3!

I was in bed by 9 pm because I was determined to have a kick-booty workout Saturday morning after having an entire week out of the gym.

Saturday

Almost 2 straight hours of working out Saturday morning and 1280 calories burned.
It was JUST what I needed! 

After the gym I quickly showered and got ready because mom and I had a florist appointment, and I am very happy to report our wedding florist is now BOOKED! One more thing to cross off of the list which makes me a happy, happy bride to be.

We then went to Wild By Nature which is a natural food store very similar to Whole Foods, it was my first time so I basically dragged mom up and down every aisle so I could investigate. We didn't get too much but we did pick up lunch. Spicy tofu sandwich for her, vegan dill tofu salad on thin cakes for me.


It was the best lunch I've had [outside of my own creations] in awhile. PS those thin crackers??? NEW BEST FRIEND. 3 huge crackers are only 54 calories! They're gluten, sodium, cholesterol, fat and sugar free. Basically, they are the best things ever created and I am sorry I didn't discover them sooner.

I stopped by the local bar to meet up with some friends who were St.Patty's crawling but didn't participate in any shenanigans, instead I sipped on club sodas with lemon--PARTY ANIMAL!
Came home and created an epic butternut squash sauce recipe....I will post that tomorrow, you don't want to miss out on that one.

Sunday

Woke up and hit the gym for my usual Sunday morning routine. Coffee with the girls, arms and abs followed by kickboxing.
However, it wasn't until we were already there having our coffee that we found out our regular teacher wasn't teaching so instead we all just took the arms and abs class then sat in the sauna for a bit before heading home. 
I came home, lit my first bloom candle [amazing by the way...GET IT] cranked up the Glee tunes [my go to for cleaning] and tore up the entire basement top to bottom. Who knew cleaning could burn over 650 calories? Maybe that will be the motivation I need to do it more often...

Probably not

I ended up taking an impromptu nap while watching GIRLS. Do any of you watch that show? I am a big fan, I love everything about it, Hanna is my favorite TV character at the moment.
Post nap I headed to Marshalls to exchange a pair of workout pants I bought in a size XS last week... high hopes or not paying attention? Either way my exchange purchase was even better:
Brand new hot lime Nike sports bra for $12.
I LOVE MARSHALL'S/TJ MAXX!

Rounded out the night by making my lunches for this week: chicken cutlet bites and baked sweet potato fries. Painted my nails while watching Grandma's Boy, I forgot how great that movie is!

Now it's Monday and I woke up with a killer sore throat, which makes 0 sense considering I have spent the past 7 days on heavy antibiotics for my tooth infection. I think my body just hates me lately, but we need to be on the same page because ain't nobody got time to be sick!!

Regardless my booty is hitting the gym tonight for Elevated Training and then curling up in bed for the BIGGEST LOSER FINALE!!!

Fro-Yo Bites!






Well yesterday was not the day I had planned for myself. Right after I hit publish on my post I went to the dentist because I spent all weekend in severe pain. Turns out the root canal I had last Monday was not finished yet and got infected. I ended up spending all day in bed taking antibiotics and vicodin, skipped the gym for the second day in a row in hopes of feeling better today.
I woke up feeling somewhat better today, still not 100%. Infections take quite a toll on your body and pair that with the time change, and you get someone who is all thrown off.
However I am back to work today AND back in the gym tonight for Yoga!



Sunday while I was meal prepping I decided to attempt a new idea inspired by Lindsay of the Lean Green Bean blog and made frozen yogurt bites!



I picked up this ice tray earlier in the day on Sunday at the Target dollar spot [my fave] and this perfect snaque quinoa crunch on Saturday at TJ Maxx[ best place for food finds!]. I decided to pair the crunch with an apple cinnamon flavored Chobani yogurt and freeze them.  As a result I had the perfect mini fro-yo bite!
The fact that everything was apple flavored and shaped was honestly a total fluke, I'm not clever enough to think that much into my recipes but I love that it worked out that way!

 I already have plans to pick up a popsicle kit[ is that what they're called??] and make popsicles with the new Chobani Coco Almond Loco flips because I may have picked up one....or ten this weekend.
Can't wait to make them!


For now it's time for work, looking forward to getting back into the gym tonight.

Weekend Finds & Protein Muffin Recipe!




Happy Monday Sweaties!
As I am catching up with all of you the birds are singing outside while the sun is shining and the air is finally warming up. Spring is right around the corner, I can feel it.

This past weekend Long Island got a small taste of spring and I am already finding myself wanting it more then I did before we got the little teaser. However I wasn't able to fully enjoy the beautiful weather due to a tooth infection, or at least that is what I think I am dealing with. I'll know in a few hours and hopefully be relived of this killer pain!


Anyway on Saturday I spent the afternoon food shopping with Lauren, we went to Trader Joe's and our local health food store, Sherry's.
Speaking of Sherry's they surprised me a few weeks ago with a basket of some of their favorite products from their store, some I was familiar with but most of them were new to me foods so I was really excited!


I think my favorite part of the entire basket were the cinnamon millet & flax chips, I ended up picking up another bag of them during my stop there this weekend. Thanks again Sherry's! I love you guys :)


During my shopping trip I stumbled across two epic finds:

Zico has a latte flavor!! AND it has natural caffeine.
The taste is similar to the Starbucks frappucino drinks you can find in stores and I am a big fan of this drink, definitely recommend it! I asked Zico if they are available everywhere and they said only in NYC and Amazon.

This stuff is the bomb diggity ya'll.
I love cooking with coconut oil, we know this already, but I use PAM for spraying baking sheets,pans, etc until I picked up this bad boy. I used it for the first time yesterday while making apple cinnamon protein muffins [recipe will be below] and was very happy with the results.





Yesterday was Sunday, which means MEAL PREP day for me, tooth pain or not I was not letting it stop me from being prepared for the week. I made quinoa and  tofu for lunches with a side of brussels, frozen greek yogurt bites [more on that tomorrow] strawberry and kiwi fruit salad with coconut balsamic and shredded coconut on top, and muffins.

Apple Cinnamon Protein Muffins
Makes 12 muffins


Ingredients:
2 cups rolled oats
3/4 cup egg whites[4 egg whites]
1/2 teaspoon baking powder
1 apple, diced and skin removed
1/2 cup unsweetened apple sauce
1/2 cup plain non-fat greek yogurt [I used chobani]
2 scoops vanilla protein powder [I used Sunwarrior, thanks to my Bulubox]
2 tablespoons of sugar [I used Xylitol, thanks to Sherry's gift basket]
Cinnamon

Directions:
Preheat oven to 350
Combine all ingredients in a mixing bowl, and mix well
Spray your muffin tin with coconut oil spray[or PAM] and divide the batter evenly
Bake for 15-18 minutes
One muffin is one serving:

Perfect for the quick grab and go breakfast for during the week, or for potluck brunch!
Oh and 100% clean!

Sweaty With A Chance Of Soreness

Before I started Just Keep Sweating, and if we're being honest, before I really started focusing on my healthier lifestyle I used another website to blog on.

I went on this site the other day and looked through my "fat photos" or what I could find. I was so good at hiding pictures of my heavier self that now I wish I didn't do that so I can see how far I have truly come.
Anyways I also read through my old blog posts and most of them made me sad.
I was SO sad and I didn't even know at the time.
However, there are a few happier posts and I wanted to share one with you today. This post was from the first day of the Couch to 5k program, the first day I really ran.

So this morning I woke up @ 6:45 because I heard the birds chirping outside my window and the dogs scratching themselves next to my bedside... I knew it was time to get up. So I went about my morning business..turning on the K-CUP feeding the boys and enjoying my coffee with a Trader Joe's mini bagel 


Around 7:45 I decided I am going to powerwalk this morning outside and with the babies that way we all get cardio and enjoy the beautiful weather( it REALLY is motivating) we all got dressed, me in my yoga pants sports bra and suffolk sweatshirt and them in their harnesses and started our 30 minute excursion. Normally we just walk the entire time but I decided why not walk on the grassy spots and jog through the parking lots? And that we did for little bursts of jogging... they loved it and i loved it. 

After 30 min I decided to drop them off, drink some water and push myself to FINALLY start the COUCH TO 5K program... I have been putting this off with endless excuses for about a month, and i decided there is no time like the present, grabbed my ipod touch(which has the couch to 5k app) and left. 

When I started it was really easy I was like 60 seconds jogging is nothing, i didn't get tired until halfway through... I was about to quit because I didn't want to walk/jog anymore because it was getting harder... then the app said "halfway point," i knew i couldn't quit now I made it halfway through and it was only my first day, I quit things too easily all the time and this is something I want to really do so why short myself? 

...I pushed through, i felt the breeze on my face, the fresh air in my lungs and pavement beneath my sneakers. I was running and I was going to complete my first day. It was such a great feeling. After I was done I was on a high, my boyfriend who FOR ONCE woke up early couldn't believe how much I accomplished before 9 am. He even went to workout himself because I MOTIVATED HIM!

The Best Birthday Ever





Yesterday I turned another year older.
27 to be exact.
It was also one of the best birthdays I have had to date.

The amount of love I received through texts/calls, facebook-twitter-instagram was overwhelming.
One of my favorite birthday wishes came from my Polar:
This made me squeal when I saw it, sad but true.
I hit the gym for my favorite workout kickboxing before starting my work day.

My boss spoiled me and made me feel so special, further reminding me that this job is exactly where I need to be and how thankful I am to have it.
I love my job, it has been a full month of working there and I am still as happy as day one.

After work I came home to this:
Again, spoiled.

My sister gave me a beautiful bag that is just SO me, I love it and will definitely get a lot of use out of it. My parents got me perfume, shoes, an outfit from LOFT and a TJ Maxx/Marshalls/HomeGoods gift card which I am VERY excited to use.
My aunt Carol bought me a new workout tank that I am hoping to wear to kickboxing tonight [weather permitting] and a Target gift card. 
They all know me so well!

And last but not least, Eddie gave me this:
And I cried.
I don't cry often, but this gift was so special to me and something totally unexpected.
I am one lucky girl.


For dessert we had cake pops!
Which were delicious and perfectly portioned for this overly stuffed birthday girl, thanks to an epic gnocchi dinner my mom made earlier.

Overall this birthday was one of the best to date. I am so blessed and thankful for all of my family, friends and my readers. You made this day so special for me.
