Avocado Egg Salad & Birthday Cake Shakes



Yesterday was a day of delicious, new-to-me meals.

First I made avocado egg salad on Ezekiel toast for myself for lunch.

Avocado Egg Salad:
2 hard boiled eggs
2 avocados
1T grey poupon [or any Dijon mustard]
1/2 small onion, diced
Perfect Pinch Savory Seasoning

Mash avocado and dice eggs, combine in a bowl and add mustard + seasonings.

Chill in fridge until ready to eat.
Serves 3


Super easy and very filling!


Kickboxing last night was crrrrrrazy. Cardio packed and I am definitely feeling it today.

I LOVE that quote. It's my new mantra. 

After kickboxing I made shakes for mom and I for dinner. These shakes were on my mind all day long and I really just couldn't wait to make them, so much so that they came BEFORE a much needed shower.

It was worth it.

Birthday Cake Protein Shake

1/2 cup non-fat cottage cheese
1/2 cup unsweetened almond milk
1 scoop vanilla protein powder [I used vanilla ice cream egg protein from GNC,my fave]
2 drops almond extract -- I'll use 1 next time
1T sugar free vanilla jello pudding mix
ice cubes

Combine all ingredients and blend!
If the shake is too thick add a little water to make it thinner.
Sprinkles are optional but encouraged ;)


This shake is going to be made over and over again because it was THAT good and only 240 calories! I plan on picking up a few more sugar free jello mixes this weekend to add to shakes/pancakes in the future, I just wish I had thought of this sooner.
