It has been almost a week since my last post and this break was completely unintentional, but the holidays took over my life as I am sure they took over yours.
Friday night we actually ended up in the puppy ER with Chance.
He jumped/fell off of the couch Friday afternoon and from what I was told it was a pretty loud thud, followed by some whimpering.
I didn't want to wait to see a vet just in case we were dealing with something serious, so off to the hospital we went.
Thankfully the Vet was able to diagnose him without any x-rays and it our boy is dealing with a bad sprain.
He was put on painkillers + bed rest [his favorite] and is already doing much better!
Between that and the holidays, the boys and I are exhausted!
Christmas was quiet.
Both of my parents came home on Christmas Eve morning from visiting my sister, and they brought back the gift of colds!
So we laid low Monday and most of Tuesday...I rallied and spent Christmas night with my best friend and her family, a semi-tradition we started back in HS. She is in town from Florida for the week and I am trying to soak up as much time with her as I can!
Oh and her puggle Mia as well, it's been a few years since I've spent time with this little gal but she and I had lots of fun catching up.
Lets rewind back to Sunday.
I spent my afternoon like I do every week during football season, at my local bar enjoying Sam Adams-wings-friends and football.
Minus the NY Jets...don't get me started on them ok?
When we were leaving said bar I thought it would be a good idea to attempt a twist on a recipe I found online last week.
Eddie drove Lauren and I to the food store for some supplies and then it was time to make magic happen.
Salted Dark Chocolate Pretzel Bark
2 bags of Hershey's dark chocolate chips
1 bag of Glutino's pretzels
1 cup of butter [ we used earth balance because it was in the fridge already]
1 cup light brown sugar[or dark, whatever you prefer]
Coarse sea salt
How to make this epic recipe:
In a small saucepan combine brown sugar and butter. On a medium low heat, stir until melted and bring to a slight bubble [boil]
In a double boiler place the two bags of chocolate chips, stirring constantly to avoid burning.
On a cookie sheet [if you have a third arm this would really be helpful at this point] lay a sheet of parchment paper down then cover with crushed pretzel pieces.
Drizzle brown sugar- butter combination as evenly as possible over the pretzels, then top with the melted chocolate.
Sprinkle sea salt all over the chocolate and place the tray in the refrigerator for 1-8 hours, depending on how soon you want to face plant into this salty-chocolatey goodness.
Break into pieces and try not to eat it all in one sitting.
...my family has been struggling with this all week...
