Celebrate good times COME ON!




After a rough week it was nice to take yesterday and celebrate a few important events.


But before any celebrating, I had to sweat.
I partied a little too hard with the gym rats Friday night, making Saturday's interval training class almost unbearable to get through.
I had to make modifications for my knee, but I wasn't expecting to have to modify for my hangover.

I survived the 75 minutes and felt somewhat better after.

First up on the celebrations list:
Chance's 5th Birthday!




This is a big one, we rescued Chance 5 years ago from a shelter when he was only 11 months old.
He may have never had a first birthday, let alone a fifth!
Yes, I am THAT person that buys their dog a birthday cake.
He loved it!

Then it was time to celebrate 1 year until "I Do" with Eddie AND our 5 year anniversary
 [which is tomorrow, September 3rd but he is working]

It is even more beautiful in person, and I love it!



For the first time in our 5 years together we didn't have a plan for where we wanted to go for our anniversary.
We ended up going to two restaurants.
The first was a new one in our town that is on the water, we went for drinks and apps.





I got the fried stuffed zucchini with pine nuts as my appetizer:


I didn't like it, too much fried batter...lesson learned.

Eddie had mussels and also was not impressed, something about the sauce having too much garlic
{ there is no such thing as too much garlic I told him }

Then we went to one of our favorite restaurants, Nonninas.
To which we made a second toast to ourselves, our upcoming wedding and our 5 years together.
We kind of love ourselves.

At first we decided no appetizers because we just had them BUT Nonnina's prosciutto and fresh mozzarella may be one of my favorite dishes so we ended up ordering some.
I said, "When in Rome." Eddie said, "YOLO."

 
By the time dinner came I was stuffed so 3/4 of my dish came home with me.


This was, hands down, the best dinner I have ever had.

Farro risotto with corn, green beans, asparagus, tomato and broccoli over a sweet potato puree.
It was amazing, I cannot wait to finish it today.
I also plan on trying to recreate this dish because I need it in my life and you need it in yours.

Eddie was not as happy as I was with his dinner:

Just kidding, he practically licked his plate clean.

After our anniversary restaurant crawl, we came home watched Meet the Parents and I passed out in true grandma style by 9:30.

It was a great day, I cannot wait for our wedding in 364 days!
I've asked if anyone would like me to share my planning on here and a few people have said yes, so I will be posting my save the dates sometime within the next 2 weeks.


Now it's time for some weights and kickboxing, before the beach and BBQs.
