Blueberry Coconut Oats




Congratulations everyone, we have made it to Friday!

In honor of your perseverance to get through another work week I have a new overnight oats recipe for you to try.
I know I know, I shouldn't have..but I did.


Blueberry Coconut Oats

1/3 cup rolled oats
1T chia seed
1T unsweetened shredded coconut
1/2 cup unsweetened vanilla coconut milk
1/4 cup blueberries
1T flax seed

Mix and place in the fridge for 2-8 hours.




I've had this several times this week. I am actually eating some right now before I hit the gym for a serious sweat session!

  2. Love blueberries and love oats....this sounds delicious. I haven't made Overnight Oats in awhie...may have to bring that back! Right now, I'm on a protein pancake kick.
