One of my FAVORITE things to do is cook, unfortunately I don't get to do it as often i'd like but when I can I take full advantage. Yesterday I came up with a black bean and corn burger and topped it with Paula Dean's recipe for cilantro lime mayo--so delicious!
Ingredients for Black Bean & Corn Burgers
One can of black beans(I used Goya because it was what I had)
1/3 cup of corn kernels
3 garlic cloves
1/2 cup breadcrumbs
Makes FOUR big patties
Preheat oven to 350
Rinse and drain black beans and place in a medium size bowl
Mash beans with a fork to desired consistancy
Chop garlic and onion and add to black beans
Add corn and mix well
Add the breadcrumbs and egg, using your hands mix everything together into a big bean ball
Seperate into 4 patties or two huge ones
Bake for 20 minutes, ten on each side * I like to broil on low at the very end for desired crunch
Paula Dean's Cilantro Lime "Mayo"
1/2 cup of chobani non-fat plain greek yogurt
1/4 fresh chopped cilantro
Zest half a lime then use the juice of that half
Combine all ingredients in a small bowl, mix well with a spoon and enjoy!
